Ingredients:
¼ cup chopped pecans
¾ cup sugar
¾ cup unsalted butter or margarine, sliced and softened (1 ½ sticks)
½ tsp vanilla extract
⅛ tsp almond extract
1 ⅔ cups all purpose flour
½ tsp fine salt
1 cup confectioners’ sugar
Directions:
Combine finely chopped pecans with sugar.
Add butter and process until smooth.
Add vanilla and almond extract.
Add flour and salt. Mix until it makes a soft dough.
Put the mixture onto a piece of waxed paper and roll dough into a log about 15. inches long and 1 ½ inch wide.
Wrap and refrigerate for 30 minutes to an hour.
Preheat the oven to 350 degrees.
Line 2 baking sheets with parchment paper.
Cut the chilled dough into ½ inch pieces and roll by hand into balls and place on cookie sheet
Cool the cookies and then roll them in confectioners’ sugar. Let them rest and then roll them again. This should make approximately 30 cookies.
