Cauliflower Potato Kugel

Notes: you can sprinkle kugel with paprika before baking. You'll know the Kugel is done when it is set and the top is browned. Allow it to cool for 20-30 minutes before serving.

This can be made the day before and reheated. Cut into squares and serve warm or serve with a large spoon and scoop out desired amount.


¼ cup of vegetable oil

3 eggs

1 whole cauliflower

½ bag of russet potatoes

1 large onion


Kosher salt and Lawry's seasoned salt


Lemon juice


  1. Use large mixing bowl and add water and lemon juice for potatoes so they don’t turn brown

  2. Cut cauliflower into chunks and put in Cuisinart to finely chop

  3. Peel and cut potatoes and put into water. Next, put potatoes into Cuisinart with large onion and began to pulse until you have a desired consistency.

  4. Heat ¼ cup of canola oil on stove top, watch so you don’t burn the oil

  5. Beat 3 eggs in separate bowl

  6. Mix cauliflower, potato and onions together. Add heated oil from stovetop. Add beaten eggs to mixture. Season with kosher salt, seasoned salt and pepper.

  7. Turn oven on to 425 degrees. Prepare pyrex dish by covering pan with oil and heating. Remove pan from oven and pour mixture into prepared pyrex dish.
